A flavorful and hearty Dominican Stew Chicken recipe (Pollo Guisado) featuring chicken drumsticks marinated overnight, then stewed with potatoes, carrots, and a rich tomato-based sauce.
Step 1:
Wash the drumsticks with lime, rinse, and pat dry. In a large bowl, season the chicken with all the marinade ingredients, including the sliced red onion, green pepper, red pepper, and whole garlic cloves. Add 2-3 tablespoons of sofrito and mix well. Cover and marinate overnight for deeper flavor.
Step 2:
Heat a large pot over medium heat and add olive oil. Stir in 1 teaspoon of sugar and let it caramelize until golden brown. Add the marinated drumsticks to the pot and sear on all sides until browned, about 5-7 minutes.
Step 3:
Pour 2 cups of water into the pot (using the same bowl the chicken was marinated in to scrape up extra seasoning) along with the marinated onions, peppers, and whole garlic cloves. Stir well and bring to a simmer. Cover and let the chicken cook for 15-20 minutes, stirring occasionally.
Step 4:
Stir in the tomato paste until fully combined, then add the diced potatoes, sliced carrots, and a handful of fresh cilantro. Adjust the seasoning with salt or pepper as needed. Stir well, cover, and lower the heat to medium-low. Let the stew simmer for another 30-35 minutes, or until the chicken is tender and the vegetables are cooked through.
Step 5:
Serve your Pollo Guisado hot with white rice, stewed beans, avocado slices, and tostones ❤️
